    The only greater sin than breaking spaghetti in half, is calling pasta ‘noodles’.

      I feel like the breaking of spaghetti is a bit exaggerated. Typically people prefer not to break them, but there are plenty occasions in which Italian people do break spaghetti.

      Such as using them in a soup, or cooking for an older person which may have problems using the fork properly.

      However, if you break spaghetti because your pot is too small you’re definitely doing it wrong. Keep breaking them if you want them smaller, but use a larger pot; that will prevent them from sticking together. You do want quite a lot of water to cook pasta, not just enough to cover them while they’re completely packed in the pot.

      Pasta is a class of noodles. Udon and spätzle are also noodles, but they’re not pasta.

        It is the other way around, a noodle is a type of pasta.

        Pasta literally means paste, it refers to the dough pasta is made from. Is fact, it also means dough and pastry.

          Loanwords can change meanings after borrowing. “Pasta” in German and English refers the Italian specialties, while pasta in Italian means any kind of noodle and even some dumplings. “Noodle” kept its meaning in English from German nudel / Dutch noedel.

        Spaghetti can be classed as a noodle. Not all pasta however is the long thin strand necessary to be classed as a noodle.

        I absolutely despise the continued american assault on language. Words have meaning, even if americans are too stupid to understand the concept.

    Over a hundred? I’d place it in the several hundreds.

    I myself have easily tried 100 different types. Currently have about 10 in my closet, and I’m out of pasta…

    Moreover, I wouldn’t call it pasta noodle, the word noodle implies an elongated shape; which is not always the case with pasta.

      It’s not all pasta. The small bead types or star shapes aren’t generally called noodles. But otherwise what’s wrong with calling an egg and flour mixture in a string or ribbon shape a noodle? It’s a generic ingredient/shape descriptor. Is it only Asian cuisines for you?

      There’s no one perfect pasta shape, it depends on what you’re cooking. That’s why there’s so many shapes.

      But yes, I do want to see pasta forming civilization and fighting for the control of tomato sauce.

          Nothing against that. It’s actually quite nice to only use one kind of pasta since that way you don’t have a bunch of packets with a bit of pasta but not enough to cook.

          If I may suggest, I feel it is better to have two types of pasta at all times though. One long and one short, those are the ones which make the biggest difference; keep your mezze penne but maybe add in some spaghetti or linguine. Aglio olio e peperoncino is much better with long pasta, on the other hand something with larger chunks such as a pasta alla norma is generally better with short pasta.

    As someone from NJ, I thought this was common knowledge. Each type is often paired with a particular kind of sauce or dish. Legend has it if you pair the wrong pasta with the wrong sauce, or commit the even graver sin of breaking the noodles in half before cooking them, a dark haired man in a wife beater with a fat gold chain will come and beat you with some deli meat. Some say his name is Sal, but he doesn’t speak, he just looks straight into your soul and gestures like this 🤌

      It’s just whatever culture you’re familiar with. I grew up with a ton of different pasta names as well but I didn’t know the difference between dumplings like gyoza, shumai, xiaolongbao, and wontons.
