If you trust the initial install then unless there is a warning about the signing key you are good. Only signal devs can sign the builds so if you installed the play store version then updated with their standalone apk or fdroid version then it should just work as the signing key is the same.

Guardian project are just publishing signals apk files as the signature matches.

I got a second hand 2011 model for free. I leave it in airplane mode and copy the books over via USB after converting them with calibre. I would not buy an amazon e-reader in the future. Simply because they are a shitty company.

I would instead recommend running a tor relay or i2p node. That way you have encrypted traffic and are helping others and further legitimizing privacy by its everyday use
